Vacuuming + Goals


I’m sure you saw the title and thought, “Cynthia must be cleaning up after a great Christmas weekend.” Nope. We had our traditional Chinese food and a movie to relax after a busy work season.  Besides with my allergies Hunni does the vacuuming due to all the dust.  Not that I mind. Smile

Instead while Hunni vacuumed the bedrooms for our guests, I made local acorn squash.  I cut the squash in half and dug out the guts before roasting in the oven.  Squash is one of my favorite substitutions for pudding like my kabocha pudding.

Apparently if you leave the squash to cool in the pan it does some vacuuming of its own.


My inner Alton Brown showed up after the squash cooled.  I geeked out over the crystalized fruit sugars in the dish and the vacuum created as the heat inside the squash cooled creating the vacuum.  Perhaps I shouldn’t watch Good Eats marathons when I have insomnia.

Now to brainstorm what kind of squash pudding I’ll create this time.  Perhaps a bit of honey with some rice milk and coconut yogurt.  Oooo that does sound good.

Now the goals.

Last Week’s Goals:

  • Finish Christmas work. Hallelujah another Christmas effort is over.  We survived and actually enjoyed it despite being WORN OUT!  It goes with the job and we love it but are happy it is over. Smile
  • Prep menus for next week. I’m so happy to have a meal plan…you have no idea how happy.  Food will be coming out of my kitchen that isn’t from a box or can.  Some old favorites and some new treats.  Oh and my cousins want to make cookies so the recipes I received from the CDNY Eat Drink Blog cookie exchange will come in very handy.  Thanks ladies!
  • Rest. Sleep is a wonderful thing.  It was the best Christmas gift I received.  Naps in the middle of the day don’t need to end at childhood.  Peanut and Leo didn’t mind either because they could snuggle under the covers with me.
  • Rejoice. I love my job as a pastor year round…but at special holidays like Christmas and Easter I love it just that much more.  Being able to share the true joy of the season with our community and church made me smile even through the busy last few days of work.  I’m so blessed to do what I do.

This Week’s Goals:

  • Be a big kid. My cousins are visiting for a few days so I’m going to enjoy things like sledding, snowball fights, snow angels and building forts.  Can you tell we are getting the 20 inches of snow from the Nor’easter?  Other fun kid events, homemade pizzas, Wii games, cookie making and lots of silliness.
  • Regular workouts. No excuses this time.  I’m on vacation this week, I have a home gym if we’re snowed in, and I miss it.  Nothing like a great workout to get back into a schedule.  I’m looking forward to some runs too because…
  • New Year’s fun. I’m spending New Year’s Eve with my church and then watching the ball drop with Heather.  To start the new year off right a group of us are running the Hangover half…okay we are running the 3.5 mile run but isn’t that a cool name for a race.  Hopefully we don’t freeze our faces off because Heather is dead set on watching the Badgers game that evening in the Rose Bowl.
  • More tests. I’m in to be poked and prodded a bit more this week to finally get the answers on all my allergies.  I’m excited to have a full list so I can start recipe recreation and working with my dietitian.
  • Grocery shopping. I’ll be the firs to admit that my grocery list doesn’t have a thing written on it.  Partly because I don’t know what I can’t eat and don’t want to waste food…and partly because we had no time to cook until recently.  Luckily I have a good stock of some foods for meals this week but 5 people will eat it faster than 2 so I need to go shopping ASAP!

      I think your goal to be a big kid is great. It’s the perfect time of year for outdoor fun – especially with the snow we just got in NE. I’m hoping to get in some snowshoeing myself.

      And I’m so glad to get back to my eating and workout routine. The indulgences over the holiday were good but I miss my veggies and exercise time. Easy enough to get going this week.

        We are going to have fun snowshoeing after the family leaves but we will have fun sledding with them while they are here.

        You are so right. It’s a toss up between the homemade thin mints and your butter cookies for the second batch.
