After my lackluster trip to Trader Joe’s and Whole Foods yesterday I was on a mission.  My sweet tooth was aching but so was my stomach.  I go in spurts of whether I need sweets but something lately has sent my sugar needing soul into overdrive.  It might have something to do with the stress of life lately but that can’t be helped.  Since I can’t stop the stress I needed to feed it with sweets.



Enter my job for the day.  I was on a hunt for food.  I got all my work done in the morning so the afternoon I went on a hunt…a web hunt.  I’m not a big internet surfer.  I know there is a dept of knowledge out there but I don’t really care to search it.  I’m not a You Tube watcher, Stumbler, Digger or even much of a Tweeter.  I visit the same 4 or 5 sites over and over and over.  But today I sharpened my hunting skills and went in search of IBS friendly sweets recipes.



I didn’t know what I was looking for but I knew what I knew what I didn’t want.  I didn’t want anything with refined sugar or chocolate.  Two of my big trigger foods causing the hot daggers in my tummy.  Kind of hard to search that on recipe sites.  So I hit up Zesty Cook.  His recipes always look so decadent and today was no exception.  The newest entry was for a healthy cookie sweetened with agave and apple juice.  Two things I can eat!!! Yeah Zesty!  Using the search bar on his blog I came up with some other recipes for things to try.



And then I found mecca.  One of the search result came up with a guest post from Simply Sugar and Gluten Free. I have no problem with gluten in my diet but most of her recipes are sweetened with IBS friendly sweeteners.  I had fun just exploring and drooling.  I think I almost ruined my keyboard with it all.  I printed off some great cookie recipes that I already had the ingredients for and added her blog to my reader.  I will be visiting there often.



I set to work on making cookies while my teriyaki tofu burgers for dinner cooked up.  I was making Almond Butter cookies.  But I am short on Almond Butter since I’m a nut butter snob.  I only like the raw unsalted version and TJ’s was out.  And I was not about to lighten my wallet and pay $12 for the Marantha version at Whole Foods…I’ll just hike back up to TJ’s this weekend to replace my stash.  So while almond butter cookies sounded divine I subbed in some Teddie Peanut Butter.  I’m not big on peanut butter but I love peanut butter cookies.



I made some other substitutions also for what I had on hand.  Into the kitchen aid I threw:

  • 1/2 cup unsalted butter
  • 1/2 cup Teddie Chunky Peanut Butter, softened in microwave
  • 1/2 cup agave nectar of the gods
  • 1/3 cup egg whites
  • 1/2 tsp vanilla
  • 2 cups bisquick

Mixed on medium for about 5 minutes to incorporate into this yumminess…

Looks like cookie dough to me.

I will admit to eating a few spoonfuls of batter…who doesn’t eat cookie dough batter.  And don’t worry about the egg whites, they were pasteurized.  Besides what fun is making cookies if you can’t eat some of the dough.

The recipe said to refrigerate for 1 hour to allow it to firm up…but I’m a bit impatient so I just set to work making my cookies.  Did I mention I was impatient…because I didn’t roll them into balls since the dough was too sticky from lack of refrigeration.  But I’m going to eat them anyway even if they aren’t pretty.

I did take the time to make the traditional fork routine to make them loo like PB cookies…a girl has to have some standards 🙂  Into the oven for 10 minutes and then resting on the pan for another 5 to continue cooking.  Then finally onto a cooling rack to firm up.

Of course Hunni and I had to taste test the flawed one.  You know the one that broke as I took it off the pan.

Okay maybe I broke it after I put the second batch in the oven 🙂  But doesn’t every good chef need to test their product.  And they were holy yum-tastic.  Kind of cakey but with a distinctive Peanut Butter Cookie taste.  If I’d have to rate this recipe I’d give it…







Yep that’s two thumbs up.  I’d give you two big toes up too if I’d had a pedicure recently because even after my dough tasting and a cookie and a half no stomach pains.  WoooooHOOOOOOOO!



I had to forbid Hunni from eating anymore since these could get expensive to bake with the amount of agave I had to use.  Don’t feel bad for him since he still has Girl Scout cookies and Trader Joe’s double chocolate chip in the cabinet.  But I’ll take the price of a big bottle of agave instead of a night writhing in pain.  And this made a bit more than 20 cookies so they should last me a bit since they are a treat.  They aren’t point friendly so one or two will have to do at a time.  I’m eager to some more recipes later this week.



My hunt was successful and my belly is full of goodness.  I think all in all this was a successful day and I’ve already accomplished my extra goal for the week and working on one of my goals for 2010.  Not bad if I do say so myself.

    Those look yummy 🙂 It’s always nice to find recipes that work and don’t make your tummy hurt. I remember finding coconut bliss ice cream in america and crying because I could finally enjoy ice cream without having a tummy ache 🙂

      I know…There is a recipe for Icecream on that website that I really want to try but need to convince Hunni for an ice cream maker this summer 🙂

    I’m so glad you found some sweets you can enjoy! I love agave, but you’re right about it being so expensive.

      Thanks Katie! Hunni and I agreed that since I won’t be eating them too often the big bottle is worth it.

    Those look so good. I do love peanut butter cookies but don’t make them very often because I would probably eat waaay too many!

      They were very good. Right now some are in the fridge and some are in the freezer. I have to be careful that having them in the house doesn’t become a trigger.

    Yay for finding something that works for your tummy!

    I’m not a big cook but I do like finding new dessert recipes. Right now I make my cream cheese ball all the time to bring to parties and it has been a huge hit. Not WW friendly but good for a sweet fix. ;-p.
